Something very special is currently happening in vibrant Bangkok! On October 28, 2025, Palmier by Guillaume Galliot will open its doors at the Four Seasons Hotel on the Chao Phraya River with a fresh, exciting menu. Chef Guillaume Galliot, who also serves as Executive Chef at the three-Michelin-star Caprice in Hong Kong, returns to Bangkok for the launch, bringing with him his passion for French brasserie cuisine.
Palmier's new menu combines classic French dishes with seasonal ingredients and a touch of creativity. Galliot aims to create a connection between his French roots and the dynamic energy of Bangkok through his food. Highlights of the new offer include the stuffed duck à l'orange, beef bourguignon in red wine sauce, a burger with Wagyu beef and foie gras and a trofie pasta with crab meat in bisque sauce. Noble classics such as a chicken rôti with morels and the timeless Sole Meunière Classique round off the experience. Great importance is also placed on fresh, local and sustainable ingredients, which makes the dishes not only tasty but also environmentally conscious.
A menu for every occasion
A special treat of the new concept is “L’Ardoise”, a daily changing menu that is based on the tradition of French brasseries. Guests can choose between two- or three-course meals, which are offered at moderate prices of THB 1,500++ and THB 1,850++ respectively. Vegetarian options such as zucchini flowers stuffed with ratatouille and parmesan coulis are also available.
Another treat for social gatherings are the Seafood Towers, which are wonderful for sharing. The entire menu is designed to highlight the natural flavors of the ingredients, with an emphasis on high quality and classic cooking techniques. Chef Guillaume Galliot will be in Bangkok in person on November 7th and 8th, 2025 to introduce the new menu.
